Advice, advice? Dessert recipes wanted
I am having about a dozen people over on Sunday, for my much delayed (and sunny but *cold*) housewarming. What should I serve? I am going to make something flourless with chocolate, for my friend who cannot eat gluten (probably a chocolate cake), and I am going to make apricot mini pie dumpling things on my grandmother’s suggestion (half a canned apricot in a piece of pie shaped like a dumpling), and . . . what? Cookies? What kind(s)? I’ll also get some fruit for those weirdos who like to eat healthy foods instead of desserts. But I need ideas for the desserts. Chocolate chip cookies? Chocolate orange cookies? Oatmeal cookies? Peanut butter cookies? Sugar cookies?

Caramelized pineapple served over vanilla ice cream or pudding (can of pineapple chunks, drained, heat in frying pan over mediumish-high heat until they turn brown. Stir often. Takes a longer than you think it should, but you can test often ;). Reduce the pineapple juice by at least half, mix it with the chunks and serve warm over ice cream. you can pre-cook the pineapple then reheat in the microwave, too).
Fancy frozen pie: prepared graham-cracker crust, two pints of sorbet (lemon + raspberry or lemon + vanilla ice cream). Soften the ice cream/sorbet enough to swirl it together in a bowl — don’t mix it completely, you want some separation. Plop into the crust, smooth it out, and refreeze a few hours. Put in the fridge for an hour or so before you want to actually eat it, so it can soften enough to cut, decorate with raspberries,
It oughta be summer, darn it! That’s why I’m thinking of all these ice creamy things. If it was October, you’d be getting the cran-cherry cobbler recipe ;) or Carrot cake

Jesse, what is wrong with you? Raisins are evil.
It’s too cold for ice creamy things, and neither of those will serve well for walking around, but I am going to try those two, especially the caramelised pineapple. Is it as good as barbecued pineapple?

It’s the same idea as barbecued pineapple, you just don’t have to worry about skewers and fire, etc. Plus you can use canned, which in my mind is A Good Thing, given I don’t have to cut up the pineapple.
I shoulda twigged to the “walking around” part. How about chocolate truffles?
1/2 lb semi- or bitter-sweet chocolate, very finely chopped (got a food processor?)
3/4 cup heavy cream
Heat the cream over med-high heat, stirring with a whisk until it comes to a full boil. Pour cream over chocolate all at once, stir with whisk until choc. is completely melted and the mixture is smooth. Let cool to room temp, stirring occasionally. Then cover bowl and put in fridge and stir every so often until the mixture is thick and spoonable (about 45 minutes). Make mounds (1-2 tsp each) on a foil-lined tray, and stick back into the fridge to firm up (about 15 minutes). Form mounds into balls, and roll in finely chopped nuts and/or cocoa. If they seem too warm (you’ll know it), put back in the fridge for a few minutes.
Messy, but very, very easy and tasty…

But raisins dance AND sing. Plus they have rad sunglasses. I can’t think of any other cookie ingredient that matches all of those requirements. M&M’s come close, but they wear lame sunglasses.
